What's for dinner tonight? Dinner ideas?

OK, they were not the typical Prime NY Strip from Costco, but for emergency steaks, they turned out pretty good. I'm loving the combo of smoke bath on the Traeger and then searing on the gasser with GrillGrates.

I'm leaning that way as well for steaks, grill grates on the gasser is quicker and easy for the sear.
 
Tonite: PickleJuice/Buttermilk/Frank’s RedHot/AnchoChiliPepper 24-hour brined chicken thighs. TR -> 300*F to about 175*F internal, couple of squirts of 50/50 mongrel BBQ Sauce/AppleJuice last half hour.

Rub is just smoked salt, pepper, smoked paprika, garlic powder, onion powder and hot mustard powder.

Yeah, I am really impressed with how they thought this through. My CyberQ saved stuff as well, but it was only locally stored and no share options. Not sure if their new units have the online share options
I am getting close to done
The 'Lid detect' works amazingly well also in the drive. Every time I use this I am more and more impressed

Nice! I will try my FireBoard Drive out on a couple of pork butts on one of my Big Green Eggs. As we get cooler temps, the Ceramics do better for overnight cooks. Love the geekiness of it with cool features that I can access from my PC instead of phone or tablet.
 
Pork loin tonight. I like to buy those massive hunks of port at Costco when they are on sale. I then cut them into 3rds and vacuum pack them for later. Sometimes I will slice them into chops which SWMBO turns into authentic German Schnitzels. Tonight, it's just a chunk of pork loin rubbed in EVOO and dusted with Meat Church Gospel all purpose. I'll sear it at 450 for 30 minutes, then back it down 350 till it reached 145 internal. Slice & serve with Fischer & Wieser Raspberry Chipotle sauce. Easy Peasy cook.
