I noticed that the Worcestershire sauce did not mix well.

1,250 mile drive??? You got some jewels on you ma man... I'm trying to make it to Wisc to see very old relatives but can't justify this covid crap and traveling. It's good to love family that much, that's a rare thing.
 
18+ HR overnight brisket. Meat Church rubs, rested overnight, then last night in at 190F super smoke with Smokin-it generator running as well. 15lb prime packer from Costco, fat side up, this morning, foiled wrapped at 160F, upped to 225F and pulled at 203F. Rested in cooler for 3 hours, my dear God, my best brisket to date, butter!
This is addictive stuff, I am a convert to the fat side up method.

I am a convert to the fat side up method.
Like I said, it's like auto basting while it cooks in a Traeger cuz you don't need to protect the underside from direct heat.

This one I pulled at 205. I think I need to start pulling it a bit sooner. Doesn't have the bark but it was really good! Chalk up another win for the Traeger though.

Kosmos dirty bird and honey killer bee - smoked 4 hours with water pan - wrapped for one hour and about 40 min uncovered and used kosmos op x 1 sauce.

Gettin the 780 fired up. 5 racks of ribs goin on. 1 slathered in hines 57, 1 slathered in mustard, 2 with just rub and 1 with S&P. Rub is Lynch Butt Shaker made right here in Iowa. Doin 321 and homemade bbq sauce. Its a balmy 22f outside.

Yep, snowed last Fri-Sat. Got about 7 inches. Then got cold mid 20s most of the week. Hopefully it'll stick around for Xmas. Grand kids love it!
 
Ribs all done, fall off the bone n wet. Time to chow down!
