It's been par for the course, the one before this I started around 10pm the night before and was done, like 11am. I think it was a 16lber.

Must be something to do with the convection difference in the grills. They should cook relatively the same. The outside temp and winds would come into play as well if the grill was having issues maintaining set temps. Because if the temps are the same inside each grill they should cook at the same rate,

This weekend cook was 45f outside temp calm winds. The cook in Jan. was 11f outside with calm winds. Heck idk...
 
You must have gotten the turbo microwave options on your grills 😊👍

The brisket turned out very moist. Moisture poured out of the point when I got there. Will definitely do the tallow again. A bit messier and a bit more work. Not sure what amount is the right amount to add.

Made a rookie mistake when I cut it, my first two slices were with the grain, DOH!
Not much of a smoke ring. Cooked this one fat side up.
