What's for dinner tonight? Dinner ideas?

Flavor and smell and bark were amazing. The point (what I ate of it) was tender, but the flat was not especially tender. I'm stuffed. Wife is stuffed. Franklins homemade BBQ sauce is pretty darned good, but I think I'll go half the brown sugar next time.

The bark surprised me. When I wrapped it, the brisket was more red than black. I'm very pleased that it blackened up.

Salmon -- forming pellicle for tomorrows smoke (will probably vacuum pack and freeze all three fillets once done)

Great work there! I have a question on your salmon. I am just pulling mine from the salt and heading for the drying phase. Do you know if this will make the fridge smell like fish? My wife is concerned!

After washing the salt, the salmon feels more like leather than fish - mine doesn't smell.
 
That's what I told her would happen, but I didn't know this was a fact. Great, here goes!

Here they are after water rinse, in the fridge now. In 3 hours they go into the pit.

Bella will be stoked with alder pellets and maple chips. I will top it off at bedtime and it should go overnight.

Edit, six hours into the cold smoke, checked the pellet/chip level in the Bella. I used an ice pic to stir the pellets and break up any bridges. Surprised that the level is only down about an 1 inch! The barrel is full of smoke, pump at around 60% speed. Pit temp is 63F

Pretty happy with little Bella, perfect for cold smoking!

What's on your Traeger tonight? I'm looking for some dinners ideas!
Starting pic. But to my dismay used the phone app because I was busy. Haaa never again. Rescued in time and all good. Starved at the end when I finnaly got it done, never took a pic.

That's kinda why I said "meat you can't "F" up" cuz you will find that it won't be like your 780 with that controller.
However, Timmy is the King so he will BEAT that Bronson into submission!!!

Making chili inside tonight. My deck is covered in ice and while I could cook on the Traeger since it's under cover, I can't make it to it without slipping and falling. Add bourbon to the mix and I'll just stay inside tonight. 🥃 🥃 🤪

I just got off the phone with my daughter who lives down in Austin and she was telling me how bad the roads are down there. She's so excited because she finally gets to use her fireplace for the first time (after thinking about the conversation for a while I had to call her back and remind her to use the damper...we always had a gas fireplace when she was growing up and had no idea!).

Enjoy the bourbon! I pulled some bacon off the grill a few hours ago and now the temps are dropping quickly here so believe there may be an old fashion or a neat scotch in my immediate future!
