Flavor and smell and bark were amazing. The point (what I ate of it) was tender, but the flat was not especially tender. I'm stuffed. Wife is stuffed. Franklins homemade BBQ sauce is pretty darned good, but I think I'll go half the brown sugar next time.
The bark surprised me. When I wrapped it, the brisket was more red than black. I'm very pleased that it blackened up.
Salmon -- forming pellicle for tomorrows smoke (will probably vacuum pack and freeze all three fillets once done)
