I have to try these! Not dinner, but it could be for me.
My addiction has forced me to do some more smoked Cheez-it crackers. Added some Oyster crackers as well to the mix

Nice looking roast! Should be delicious any way you do thayFor my birthday dinner tonight I’m doing my first prime rib. Using the Meat Church recipe: https://www.meatchurch.com/blogs/recipes/82199492-prime-rib?_pos=1&_sid=031cb14f9&_ss=r
Mine is a 5.5 pounder and will go on at about 2:30 at 275 temp using Hickory.

SWMBO, who is a prime rib fanatic, proclaimed “Ooh, that’s GOOD!”
I pulled at 130 IT and the let rest while finishing the sides. SWMBO said it was the perfect temp. That rocks Lloyd!!! I'm doing one on Sunday, I have a special rub for PR but everything else is the same as your's, 275° till maybe 135° IT, I have to appease the wife.
Thanks! SWMBO is fully on board with my smoking things now. That does look fantastic. Nice job on that meal
