Cooked it at 200°F set on the Traeger (actual will be about 220°F running temp). Cooked on Super smoke until 115°F internal. Then on the grill grates on the gasser for the end sear.
I will probably stop at 110 internal next time to try for a more medium rare finish.

You guys have been keeping this cut of meat a secret from me far too long 😉🤣
It was amazing. I wish I had bought the other one they had.

Not cheap at all. $13.00/LB. This was a high end butcher shop. There's a couple other places I will try. None of the stores or Costco or Walmart carry them
This one was $20.00. And he gave me 10% off that at the till.

Yes sir, Tri-Tip is a keeper!

I'm so bummed that my corner store is gone, that meat counter always had great surprises.

Well, that is kinda eye popping but it was only $20 and you gave it the royal treatment and I suspect it was worth every cent.
If I get off my butt tomorrow I'll be doing a 1.6lb Top sirloin cooked the same way, I'll see how tender I can keep it.

For traeger day, i did my first smoked beef ribs and beans. 8,20 lbs, it took 12 hours but what a great result. I understand now why beefs ribs are so appreciated 😍

Have to take off my snacks first. I am addicted to these now. Tried some Oyster crackers with it this time.
How are you making these now? I need to make them
 
I used the simple method. On the smoker when I am cooking something else.
Box of Cheez it crackers, 3 tablespoons olive oil, 1 tablespoon of your favorite rub/spice blend. I did the same ratio with the bag of Oyster crackers.

Recipe calls for 30 minutes at 185F smoke and then 30 minutes of 275F. I have just been letting them roll with whatever is on the smoker. Don't adjust temps for the crackers, use whatever I am smoking at. Yesterday they were on for about 2.5 hours at 220°F.
