Tomorrow it's another Chuckie taken to at least 195 or whatever it takes.

This time I tied it up, and rubbed 16 hours ahead of time to sit in frig

Got my grill all set up, smoke tube full, water pan already in, 2 ambient probes and ready for my 2nd shelf cook.

Clean RTD probe and maybe 2 meat probes but really one should do it.
 
Chicken parts tonight, deep cleaned the grill, cleared the auger. Played with the auger settings, "Clear" runs the auger backwards for several seconds, forward several seconds, over and over, until you stop it.
"Prime" runs the auger for 1min 40sec and clears the auger by running it twice. I will say that my auger, almost 2 years old now, never cleared before, looks like brand new shiny steel.

I loaded my new bag of Amish made 100% Mesquite. I set the grill to 420F and now, 45min after igniting it's only at 265F. So, maybe Mesquite wood alone isn't high in fuel calories? The grill had also updated firmware when I powered it up, now T2.01.01 so it may be involved as well. It said preheat complete at 165F? It ignited very fast but climbing very slow now.

These pellets are mostly crumbled as well, not sure what to think at this point. But they smell great!

Edit, Dinner guests waiting, arrgh, quickly emptied the hopper, re-filled with Traeger Mesquite pellets, in 3min the temp shot up to 480F and it's trying to regulate now. Who knew

Agreed.

I’d find a different pellet that doesn’t crumble, and use those in a smoke tube.
 
My grill lookin like a roller coaster today, 54° outside but that shouldn't matter. A little breezy but again... I wonder if my RTD is reacting to the foil water pan being there??
It very well could be the water pan, where is it in relation to the rtd? Might try moving them away from the rtd.
 
I wrap in 15° so I'll just take it out then and see what temps do till finish.

I highly doubt the water pan could cause those fluctuations, if anything it would be moderating them once the water came to temperature. I normally start with warm to hot water from the tap when I use one.
Did you recently clean your grill RTD? Or bump it maybe? I would tend to think it would be related to an error in how temps are being sent to the controller 🤔

Yeah I used hot water also... the pan is out now and it's still roller coasting.
YES, I just cleaned the RTD before this cook... so, I don't know what else it could be.
Then again, I haven't used fireboard in a while... when I do chicken and easy stuff I don't bother with probes, I put the grill in the area of a regular oven and leave it till they 'insta' probe to temp (so maybe this has been more frequent than today) I'll check the RTD after this cook and see if it's been damaged.

It cooks food for now so I'm not gonna freak too much... TILL I WANNA DO JERKY!! Then I guess I'm gonna turn into one of those guys that screams at CS!! Do I ask for a new RTD to start with????
 
I just REMOVED my Smoke Stack MOD, I'll see it that was the culprit
