Those look delicious! I was just talking to my wife yesterday about making some of these. Got a recipe that you can share? I have one that I have used before, but always looking to improve.

Here you go. Pork Belly Burnt Ends - Meat Church

I skip the sauce part as that is just too much sugar and SWMBO loves the dry rub only version.

What is your MC rub of choice for these?
I normally use their Honey Hog, but tried their all purpose rub to cut back on the sugar and both turned out great. SWMBO prefers the Honey Hog rub though.

Was the pasta noodles pre-cooked (boiled)? I done the smoke mac & cheese with uncook noodles that Timmy and other makes and they turn out great.
I use oven ready noodles, just way easier.

Saw some beautiful Prime 1 Sirloin at HEB today and thought I'd give it a try since it was half the price of Prime 1 Ribeye or NY Strip. 2 large center cut sirloins which I cut into 2 steaks simple for more edge for rub & searing. They turned out awesome with the reverse sear method after rubbing with EVOO and dusting with Kinder Buttery Steakhouse rub.

First time with the Traeger. Y'all wish me luck. Doing a pork butt today.

10 lb bone in butt.

Made my standard rub. No measurements.
brown sugar
Kosher salt
course ground black pepper
onion powder
paprika
Just mix it together till it looks and tastes right. Left on overnight

I'll baste it with sauce throughout the cook. I used to spend time making a tweaking my sauce. Now I just use Sweet Baby Ray's original. I like the way it tastes and I can't really do any better. I do add ndabout 25% water and put it in the pit along with the meat.

Got the pit set at 210 and it's holding that temp very well. Fluctuating maybe 3-5 degrees in either direction. In the pictures you'll notice several probes. Got two just to check pit temp and two in the butt itself. Need to get a feel for the pit and want to know how accurate the onboard temp actually is. So far it's on point. Using Traeger Gourmet Blend pellets because that's what my lovely wife bought with the pit when she bought it for my birthday. Hickory, maple, and cherry.
