A casual easy mid week dinner, smoked beef roast with wings. The roast will be saved for sandwiches, The smoked wings were excellent, juicy and smokey !
 
Did some fresh salmon from H-E-B today along with some stuffed shrooms. Pieces on the left dusted with SPG and the right are maple glazed dusted with Dizzy Pig Ragin River. Yum. Had to cut a round grill topper to fit as this is on the ol' Century 22.

Grill toppers make is so easy to put stuff on and take stuff off as well as turn things around for even cooking.

Pre dawn breakfast fatty. I used deer breakfast sausage instead of pork this time. Delicious!

Laying the groundwork for some Texas style chili
I have the blade/chuck steaks on now. Will cook these off till the fat is rendered down. Ground meat in the drip tray on the bottom to brown off and get a kiss of smoke.

Later I will add the Tri-tip for a reverse sear.

I'm doing bacon wrapped shrimp with Monterey jack and jalapeno on the old Century 22. SWMBO caught the sun shining through the startup of the Century 22.

Those look delicious! I was just talking to my wife yesterday about making some of these. Got a recipe that you can share? I have one that I have used before, but always looking to improve.
 
Prime Ribeye from Restaurant Depot (Superior Angus Choice $10.49/lb. - this was 1/2 of the 20 pounder :) )
Smoked @ 225 for about 5.5 hours until 124, then seared at 400 until 133.
