First Smoke of the Spring and first smoke since adding the larger grill mod on top rack. I can get 1 full slab of ribs more than before... plus half chicken & some Italian sausages.

So I pulled out my boneless pork butt expecting it to be half butterflied, but I couldn't see where they took out the bone! Changed from a four hour cook to a 10 hour cook (5# x 2hrs/pound) that I will start tomorrow morning. Good thing I'm retired! LOL:oops:

7:00 Traeger fired up and pork butt on.
1:00pm Port butt wrapped at 165°
3:00 Reached 205. Now is resting in our warming drawer
4:30 Pulled apart. Not as easy as it looks in the videos, but not bad. Great taste. Pretty tender.

It went to 205 when I pulled it from the Traeger. Should it have cooked longer, shorter?

I changed it up last weekend, smoked a bunch of stuff then got my daughters lil Weber out and did some searing and grilling. Came out pretty tasty!

The video was to big so I added it by itself.
 
Was at Costco today picking up 10 bags of potting soil for SWMBO and she tossed in a pack of "Choice" New York Strips. $10/lb, so 10 bucks a steak. Amazing what reverse sear can do. Rubbed in EVOO and dusted with Kinder's SPG.

Nothing Earth shattering but decided to branch out and try a pizza. Bought a frozen DiGiorno pepperoni. Moved all the pepperoni to one side because it's not my favorite is my wife's and piled on some leftover chopped beef brisket I'd done over the weekend. Came out pretty darned tasty. Will be doing this again. Did it at 400 and it took a little longer than expected. Had to cook it around 35 minutes. And I did use a pizza stone.

Had to drive down to San Antonio today, so Brisket was on the menu for dinner. Grabbed a chunk left over from May 2020 and popped it in the Sous Vide while I traveled.

Great seal using the now discontinued ZipLock vacuum bags. They are thicker than most.

SWMBO was amazed at the aroma, flavor and tenderness of this almost 2 year old hunk of Prime Costco Brisket.

Amazing how one can still enjoy BBQ that one slaved hours over but years ago.
