What's cooking today? šŸ”„ Pics are necessary!

Step one. Shoot a buck.... :ROFLMAO: In this case, it was a cull buck, a small Spike on my neighbor's ranch.
Step two. Quarter and process the venison.
Step three. Marinate for 24-48 hours in this marinade. Good for 5-6 lbs. of meat.

1.5 cups soy sauce
3/4 cup Worcestershire sauce
1 Tbs. garlic powder
1 Tbs. onion powder
1 tsp. ground chipotle
1 tsp. black pepper

Step four - put meat on racks and dry on smoke setting in Traeger till desired dryness is complete. Rotate racks to ensure evenness.
Step five - allow to cool, then vacuum pack for later consumption.

Fortunately for me I have a friend that hunts. He supplied me with the front and hind leg quarters I did up a little whole ago.
But the jerky has me thinking I may see what else he has that he can spare

Thanks! My pops had it made a few years ago. Works as a rotisserie. You can do about 9 racks of ribs at a time.

Christmas "pulled" Ham goes on early this morning

First cook on the gas griddle in the outdoor kitchen. Turned out pretty well for winging breakfast tacos. I cooked the bacon, then the eggs, then warmed the tortillas. As each one was done, I put them in a foil pan covered with foil and then in the Ironwood 885 at 165 to keep warm till it all was ready to serve. Kids loved it. A new Christmas tradition now. Will repeat on New Years day.

This was the best jerky ever this time. Netted out 2 lbs. 3.1 oz of jerky. Packed 4 oz. to a bag except the last one. The only change in the marinade was to use Eden Tamari Soy Sauce (the best on the planet).

Bacon wrapped STUFFED chicky thighs tonight on the T. Came out awesome. The fam likes ā€˜ā€˜em stuffed! Cheddar cheese,celery, carrots and onions for the stuffing.

Itā€™s so damn cold here, I donā€™t want to go outside or risk touching anything outside. (-28 C) Iā€™m afraid the smoker might just shatter. The wife did a sirloin tip roast in the oven. Not smoked, but pretty tasty.
