Beef brisket on the right, corned beef on the left. i thoroughly rinsed the corned beef and let it soak overnight in cold water in the fridge, a de-brine if you will.

going slow to 160 now, been in since 7:30AM.

doing a 5 lb turkey breast later, using Slim's 350f and smoke tube method. looks like it's gonna take just under 2 hrs per internet timing searches.

Brined overnight in apple cider, 1 cup of honey, and 1 cup salt. Patted dry with paper towels and let sit out for 2 hours, then injected with apple cider plus 1T Kosmos Q wood fired chicken, then coated in melted ghee, pepper, and lightly seasoned with Jack Stack poultry rub (family doesn’t love the heavy seasoning). The cook was all over the place with the temps, trying to nail the finish time specifically (the experienced Q’ers will shake their heads at my FireBoard data), But the results were terrific — the bird was delicious and certainly not dried out.

My mother-in-law said she’s never cooking another turkey again after enjoying our meal today, so kudos and thanks to everyone that shared recipes and cooking info!

Thanksgiving yesterday, a couple spatchcock turkeys, stuffed pork loin, greenbean casserole, corn/cornbread casserole, baked beans, stuffing, candied sweet potatoes, Mac n cheese and cobbler.

Yep, pretty hard to prepare. Unwrap the HEB packaging and put on the grill. :ROFLMAO: I actually tried to make these myself when they were out and the price is about the same, but they do all the work.
 
The Ironwood 885 is busy tonight with 22 lbs. of pork butt, so the ol' Century 22 get fired up for chicken nuggets in the shape of tenders. Can't argue when the family want's this. So much better than done in the oven in the indoor kitchen.

New guy here!

My first cook was BBQ pork ribs which came out a little dry, so my second cook was three days later with some adjustments thanks to people here on the boards. (Second round came out better.)

Third cook, I'd call it a success! Chinese-style roast BBQ pork "char siu" ... like my late father used to make!

Smoked Prime rib !! MC Rub, garlic powder, S and P, thyme, worcestershire. Lumberjack Hickory pellets, 1 smoke tube mixed chips. 250 f for about 2.5 h, then 375 for .5 h, internal 125. One of the best I made.
