Had a prime brisket cooking on the IW885 today.

It's now resting, before I chill it and vacuum pack it . Still, for dinner tonight are chicken thighs cooking on the Century 22. The fat is rendering out nicely.

I found a prime brisket Saturday, couldn’t pass it up for moms day, pork butt split and all rolled over night. Lookin good this morning!

Just pulled the chicken, Timberline XL cooked great, still having connectivity issues with the app on the new grill, kinda disappointed in that. Might look into those Fire boards you guys have been talking about, they seem good from what I’ve read and I like how they’re wireless and don’t need power. I have a flame boss for my XL egg but it requires 120v power.

Layered meatloaf
Italian sausage, ground pork, ground beef, bacon weave outside and keto BBQ sauce.
Some cheese in the center and some fresh mushrooms slices between the bacon and first layer of ground beef. Used some rub between the layers to season it.

Was worried the layers would separate so I egg washed between them
 
Bone in pork loin chops again. This time, custom cut by the butcher at HEB. Each one is over 1.5 lbs. Gonna reverse sear em as usual.

Got em rubbed with EVOO and dusted with Meat Church All Purpose Rub and back in the fridge till around 4 PM today.
