Made some ribs.

First time on all 3. Tomahawk was a big hit. Kids request it again. Also first time using 2 smoke tubs and kids noticed the smoke flavor right away.

Tomahawk (3.5lb), 2 T-bones and 2 Ribeyes. Everyone love the tomahawk. Medium rare is the route to go. Medium well was not that great.

Picked up a trimmed brisket flat the other day and cooked today.

Used spicy brown mustard as a binder then a rub of Himalayan pink salt, coarse ground black pepper, paprika, garlic powder, and onion powder.
Hit a stall at around 155 so wrapped and got through.
Turned out pretty good but I was disappointed in the bark of which there wasn't any. I know wrapping probably messed that up.
Think I'll do it unwrapped next time.
Was plenty moist and had a good flavor.
I'm still learning this Traeger. Definite learning curve for this old man. But I'll get it.

How good is just a flat?? And how long does it take…..I know every meat is different but is the cooking process the same just likely shorter?

If you like the lean part of a brisket, it's great and it does not take as long to cool. Prime Packer Briskets are going for $60+ and this market trimmed flat cost $20.

Legs and thighs with Stubbs Chicken Rub and MC Holy Voodo. With a whole bunch of probes. Still in the honeymoon phase with my Inkbird. 😍
Took the insulation cover off today! WOO HOO!
