All done. Pulled it at 125F and rested for 25min. Perfect medium rare. I never did a sear of any kind. Served it up with mashed potatoes and Yorkshire puddings. The wife said she liked my rotisserie one better, but this was pretty good. I really liked it. The Inkbird is a game changer.
