What's for dinner tonight? Dinner ideas?

This time I actually cooked it lower at 185 degrees for a bit over an hour before cranking it up to 275. Meater ambient tracked a little under that. Got some decent smoke this way though. Total cook time about 2 hours and 15 minutes.
 
After much reading on the forum and watching Meat Church videos I am attempting my first brisket tonight!

I got to use my new butcher block cutting board!

The plan was to trim and season the brisket beginning at 8 pm and load it on the grill by 9 pm.

Well, when I switched on the grill I get this:

Fortunately, that didn't take too long and I ignited her and she starts smoking!:

But then it started to rain heavily and it was a challenge to get brisket in. Couldn't get a photo. But here she is cooking away in the rain:

The plan is to wrap when the flat reached 165 sometime in the morning.
 
24 lbs pork butt goin overnight for pulled pork for a reveal party tomorrow at 3pm.

doing good Feast Master, they will be getting done at diff times, that's normal.
Gives you more time to wrap and cooler each one before the next one is ready.
I used to 'color code' my towels and write down which one was first at what time, easy for them to come out of the cooler the way they went in and start pulling one by one.
 
Looking good! Don't forget the rest time, over an hour, I like 2 to 3 myself so I start a bit earlier
It too a little longer than I expected. I started the previous night at 9 pm and my plan was to wrap by 9 am and be done by 4-5 pm. Next time I will start a little earlier.
 
3 butts finished and resting 4th one is close other 2 are lazy. Lol , Mac n cheese on for some smoke.
