It was almost as good as doing it on my offset. I did say almost.

Bottom line , no wrap till it goes into the cooler for me!

Still seem to be having issues with my FB. Not impressed seeing I had to pay to send it back once already. Going to test it again tomorrow and if there is an issue still I'll email them on Monday and see what they say. Probe# 3 kept cutting out in the beginning. It seems fine for the last hour or so
Going to wrap one in foil and the other in butcher paper and see if there's any difference.

I’ve had probes cut out like that before, and cleaning the connector with alcohol solved my issues. I use a tiny gun cleaning swab to clean the contacts in the FB itself

My take was that there was better smoke flavor and the ribs were more moist in the foil. I would have thought the smoked flavor would have been greater in the paper wrap.

They look great Jake, but i don't think anyone can improve on a decades long technique of foil wrapping ribs, mostly because by the time you foil them, they have as much smoke flavor as they are going to get... unless you want them to take on a "dirty" smoke (heavy white smoke) flavor.
