I've made a couple, here's the two recipes I've tried.

Tri-Tip [2:30]
Dry Rub, Sit Out 45min
225F Super Smoke
Cook w/Probe to 125F, 60-90min
Remove and Heat to 500F
Sear Meat 5min per side.
Rest 10min.

Tri-Tip [5:30]
Marinate 2hrs, flip once.
1/4C Brown Sugar
1/4C Molasses
3 TBSP Soy
2 TBSP Rice Vinegar
1 TBSP EV OliveOil
5 Clove Garlic
3 TSP Chili Powder
1 TSP Minced Ginger
½ TSP Black Pepper
180F Super Smoke, Probe to 125F (2-3hrs)
Pull, brush with Marinade.
500F Sear 5min per Side, probe to 135F
Rest 15min
Add 2 TBSP Water to Marinade and simmer into dipping sauce.

Got my little batch of Beef Jerky going... got both smoke methods going at once... OH BOY, might have the fire dept called on me!!!

Leftovers tonight. Some great chicken tenders cooked on skewers. Tomorrow is going to be beef kababs. Got a great deal on prime sirloin for $5.99 a pound at Slim's favorite place. Gonna cube these puppies up and marinate overnight.

Any advice on wings tonight? Was going to smoke for about an hour at 225, then cranks the heat to 500 for the last 15 (ish) mins. Is that going help with crispy skin or is it going to be like eating a rubber glove?
