today. This here is 1/3 of a monster 9 lb. pork loin. Rubbed it with EVOO and dusted with William's Rib Tickler.

Going to roast it at 450 for 30 minutes then drop the temp to 350 till internal temp hits 145.

I was going to get some Rib Tickler but they are pretty much sold out!

Man, was it good. Amazing how a $4.50 hunk of protein can turn out.

Of course it was served with SWMBO's sauerkraut that has been simmering since yesterday along with potato pancakes made from leftover mashed taters on Christmas day. Yum. Happy New Year!
