What's for dinner tonight? Dinner ideas?

Good ol' Pork Loin. The Traeger does a great job. Costco had them on sale. First, it still is reasonable at $1.99/lb. but then another $4.00 off the whole loin, which means 10 bucks for big hunk of meat that is good for 4 meals. This one is rubbed in EVOO and then Meat Church Honey Hog.

Saturday was brisket day. Used Lumberjack mesquite pellets. Nice amount of smoke, but by far the most ash I have had after any cook.
Found out my probe thermometer near the end of my cook, or what I thought was the end wasn't reading right. It was 14 degrees off. So dinner was a little late. Glad if it had to be off it was reading higher than what the actual was. I had calibrated it. Correct at 32F but 14 degrees out

Sunday's cook. Going to name this twisted pork.
Took three country style ribs and bacon. Used a different rub on each piece. Twisted them together and on the Traeger for some smoke at 180 for a couple of hours. Upped the smoker to 225 and finishes them off.
Tender and moist and lots of flavor. Used some Pitboss Charcoal blend pellets. Nice smoke and flavor from these pellets.

Your Twisted Pork reminds me of sweet breads. I love grilled sweet breads but never thought to them on the Traeger, guess I'll give that a shot.

When I started up this morning I just used a smoke tube for the first 1-1/2 hours. The Yoder fan works when the power switch is turned on, so it moves that smoke around quite well. The tube didn't last as long as I thought it would. Figured maybe 3 hours, but it barely lasted 2. Had apple wood chips in it and some apple pellets mixed in.

I tried the first loin that came off, it turned out perfectly. I'll get Dexter out tomorrow and slice it all up.
Everything else finished up now too. Cooked on the bottom shelf for the first time on the Yoder. The front right is definitely running hotter than the rest of the grill. Some of the Shotgun Shells got over cooked

Found some decent pork belly at Wally World today. Used a little Sweet Baby Ray's as a binder then in a bag with some of Hoop's special pork rub to overnight. I'll put it on the pit tomorrow. Looking forward to it. I love pork belly burnt ends.
