What's for dinner tonight? Dinner ideas?

Care to share your recipe? I know you can make them 100 different ways. Want to make some for this weekend.
They are easy to do. I seasoned some bulk pork breakfast pork sausage with Meat Church Honey Hog. I used oven ready Canelloni shells and I put some garlic herb cheddar in the middle. Filled each end with the sausage mix. Use thin sliced bacon (don't use thick slice, it won't render quick enough). Stretching the bacon slice helps to thin it more as well. Wrap the shells with the bacon. Season the bacon wrapped shell with the rub of your choice. Put in the fridge to sit. I left mine overnight, some say a couple hours helps to soften the Shells, some say you can omit this step. I did mine up the night before.
I put some BBQ sauce and a bit more rub on them and put them on at 225°F for 3 hours. You can bump up the temperature to 275 for the last hour if the bacon isn't rendering fast enough. I sauced again for the last hour

Couple slabs of side ribs for tonight
Had some sweet and sour cut ribs in the freezer and figure I should smoke them up at the same time. They will be nice to have precooked and just to reheat from the freezer later.

If at first you don’t succeed…

A year into this Traeger adventure my attempts at ribs have turned out ok-ish at best. I am a stubborn, stubborn man, however, and so once again into the fray…

Today’s effort has a new rub (maple chipotle,) and is currently wrapped in butter, more rub and maple syrup.) I’ll finish it off with some home made sauce that is heavy with…you guessed it…maple syrup.

Anyway, wish me luck (with the ribs, but also with not getting diabetes.)
 
Been slacking on pictures. Finally tried the smoked cream cheese. Also been smoking turkeys and slicing for sandwiches throughout the week. Better than store bought.
