What's for dinner tonight? Dinner ideas?

My Christmas Mini Prime Rib Roast. Traegers and prime rib go together nicely. I always cook mine rare / medium rare. It turned out very good. It had a great smoke flavor. My usual style is to cook 225 F for 1 hour, heavy smoke, then 275 F for 1-2 hours for internal of 125 F then I pull it, sometime i go to 130 F internal if i have someone wanting less rare and more medium rare.

I have to agree the Traeger is a great roast cooker. Enjoy!

Cooked these up for an NFL tailgating party on Saturday. Bacon-wrapped little smokies, coated with buffalo wing sauce, then rubbed with a brown sugar based pork rub. Then onto the Traeger at 275 for 45-60 minutes. Outstanding.

Well thought i would do a brisket SF Area costco harris ranch 16 lb brisket trimmed to 12 rub is meat church Holy Cow/ Holy Gospel, over night then on to the Traeger @ 225T SS for 8. Hrs 165 IT then paper wrapped , at 10 hrs raise temp to 280T until IT hit 202 then rest wrapped in a towel in a cooler. Was a winner…

Wish I could get Harris Ranch meat down my way. Always a great place to stop for a tri tip sandwich on the way to Monterey
