Looks good. Did you find it salty as well?
Did you soak and/or rinse the pastrami before spicing it up?
I didn’t find it salty, I tasted more spicy. Yes soaked it for a day with sugar and pickling spices.

Left over “Margarita pulled pork”, some pico and a plate of nachos!

So this reminds me, we need to add a vacuum sealer and sous vide to the “accessories” thread.

Went pretty well overnight, temps were coming up fast, IMO, so I turned temp down. Pellet consumption was very low, was level full last night and about 4” down from the top this morning. About 7 hrs.

Burnt ends all chopped up, butts are resting in the cooler, beans on the smoker.
