I am doing a Treager Rack of Lamb

Kids are coming for dinner tonight. Going with Wagyu London Broil. Marinating now with EVOO, granulated garlic, and HCC Black.

Will reverse sear later this evening. The marbling is amazing. So happy my local HEB has this for $7.99/lb.

So, my local ACE has added Meat Church! I snapped up some Voodoo to try out.

Closest place to me that had any on the shelf is over a 2 hour drive away

I bet you’re gonna like voodoo. Has a nice kick, and wonderful flavor. I’m smoking a chicken right now dusted with Holy Cow, and Voodoo
 
I had a disappointing dinner, 2nd attempt at jumbo shrimp. Simple EVO coat, light dusting of seasoned salt. Grill at 500F with GrillGrates, 3min per side. They were cooked perfect BUT, no tangible grill marks or caramelizing 😢

Maybe should have used the flat side of the GrillGrates?

Maybe this is just a job for the gasser.
I’ve been doing seafood in a cast iron skillet and have been going back and forth between the Weber and Traeger.

I’ll add a little avocado oil and get a good “burn” on each side.

My new favorite is grouper seasoned with Bearded Butcher Hot. Good stuff!
 
I just place them in one of those Weber fish holder mesh thingys. Toss them on the Weber, three minutes per side on low- medium direct heat. They come out great...
 
I cooked a 12# pork butt today for a gathering tomorrow. By far the best one I have done to date!! Lumberjack 100% hickory pellets and Suckle Buster Hog Waller rub.
