The speed in the ice bath and the roast looked the same to me. But it’s really hard to really get a gauge on the speed just by watching him jab them in a certain spot in the meat. The thing that I found most interesting is how little speed difference there was between the two when going from ambient to cooking temps. There was a much bigger difference in speed going from ambient and an ice bath.
Exactly!I never claimed it was a scientific review.
But even with "scientific" reviews, results are always open to interpretation.
