Thermapen One

Internal temp for a good medium rare?

They shipped jelly beans with the warranty replacement of my smoke base unit.

I included a couple squares of ghirardelli peppermint bark chocolate when I returned the faulty one.

For those that are interested in seeing the Mk4 and the One side-by-side, The Barbecue Lab released a video review yesterday:

The thing that I found most interesting is how little speed difference there was between the two when going from ambient to cooking temps. There was a much bigger difference in speed going from ambient and an ice bath.

The speed in the ice bath and the roast looked the same to me. But it’s really hard to really get a gauge on the speed just by watching him jab them in a certain spot in the meat. That isn’t the way I use my MK4

We're talking BBQ here. There is no actual advantage to the new one in real world cooking. It's basically splitting hairs. WTF is 1 second when you are cooking for hours? I usually like being on the cutting edge of tech, but this is a point of diminishing returns.

Thanks for the vid @KraZ440 . I found it very helpful.

Of course it just feeds into my confirmation bias. ;)

Considering I've been using an old ThermoWorks RT600C-N for the last several years, getting a Mk4 on sale is a big step up. I'll wait until I've broken in my Mk4 and FB before splurging on another thermometer.

Do you find any colors cooking faster than the others?
