Beef Jerky

Well, I checked the Bull rack website. I can get 6 wire racks and a drip tray for $50. But shipping is $35. You guys that have the ultimate, are the wire racks a necessity?
Or will it work ok without them?

I do think the wire racks are good for jerky as they keep the tray holes clear so that smoke can flow freely all thru the stack. The bottom drip tray isn't really needed, I don't cook with it in place.

You might be able to source them on Amazon for less? Let me know if you need dimensions.

The magic is those perforated trays.

The grates are 11.5" x 16.5" and about 1/2" high

I did the math, without the drip tray the price for 6 wire racks is just a few dollars more than the ones on Amazon. I'm going to check a few places locally and see what I can find. If I can and they are about the same $, I'll just get the ones from Bull rack.

Well after work I viewed the posts better. It looks like the racks on Amazon are almost identical to the ones in your pictures. So I ordered 3 sets for a total delivered price of $60.

That means I pretty much have $110 in an $190 setup. Can't beat that with a stick!!

And they will be here Monday!😁
 
It's Jerky time and I want to try out my new Bull Rack Ultimate 6 on my Ironwood.

Start off with a very lean cut of beef. Eye of Round is probably the cheapest and leanest cut out there. Rather then deal with a bunch of little packs, I asked the butcher at my local HEB for the whole cryovac bag. He gladly accommodated me.

Next whip up a marinade. There are loads of marinades out there, but I do not want any sugar in mine as I want Keto Friendly beef jerky. Here's mine.

5 lbs meat

1.5 cups soy sauce
3/4 cup Worcestershire sauce
1 Tbs. garlic powder
1 Tbs. onion powder
1 tsp. ground chipotle
1 tsp. black pepper
Optional: (I added a few sliced whole cloves of garlic)

Next make sure you trim as much fat as you can from your meat. Fat will go rancid over time and you don't want that. Then slice it thinly across the grain if you want tender jerky or with the grain if you want new dentures. Unless you have a very sharp knife, it helps to put the meat in the freezer for a short time to firm it up.

Now, just put the meat in a non-reactive container with the marinade for 24-48 hours. I put mine in a 2.5 gallon Ziplock. I also will open the bag and make sure all the slices of beef get access to the marinade. You can see the optional whole garlic slivers I added to this batch.

This Saturday, I'll be smoking the jerky at 165 for 5-7 hours. I'll pull a tray for SWMBO as she likes it very tender and I'll keep some smoking for longer for a drier jerky for bagging in vacuum bags for long term storage.

Bull Rack BR6 Ultimate all assembled. Got the wildone wire racks @RemE suggested, they came today, and fit perfectly!

Walmart had aluminum tray that was the exact same size as the perforated trays to use as drip tray.

Now to get the meat and the marinade ingredients and it'll be jerky time!

Yeppers, gotta get to the store to buy the ingredients for your KETO marinade and see if I can locate a huge eye of round!
 
@GrillMeister I do have a question.
You put the trip tray in the bull rack to load, when you put it on the grill do you remove the drip tray?

You put the trip tray in the bull rack to load, when you put it on the grill do you remove the drip tray?
I'm not GM, but I use the lower pan to catch any drips, but remove it in the grill. Thinking more about it, it might be good to leave it in place to perhaps even the heat better by protecting the lower trays.

That said I do shuffle the trays every couple hours to balance things.

The only thing I noticed is the 3 lower trays are sitting on top of each other. And it's hard to get them inserted empty. I think loaded would make a mess.
