Care to share your chicken brine recipe?
I have a couple large turkey breast on order that I plan on smoking next weekend for slicing up for sandwiches
I want to brine them first
I did
1/2 Cup of coarse salt
1/4 Cup of brown sugar
A dash of “Stubbs Chicken Rub”
A few sprigs of Rosemary and Thyme.
8 Cups of water.
Dissolved everything by heating the first 4 Cups of water with the spices.
let cool and added 4 Cups of cold water.
Poured over chicken in a food safe bag and let it sit in the fridge for about 24 hours.
Rinse the bird and discard the brine.

Yeah that's the temperature bump to 195 with super smoke on. I just turned off super smoke to see if that levels it out.
The grill was doing that earlier this summer when I was cooking at that temperature. It didn't do that before.
I am sure Traeger would say those fluctuations are within their specifications.
If it continues, I'll pull the tallow pan and move one of the briskets to see if that changes it. It does look like a restricted air flow
