If you like pastrami, you'll LOVE the Montreal Smoked Meat. It is a bit of work, but well worth the effort for the end result.Great job Jake... I've had 2 Sous Vide leaks now, they piss me off.

Montreal Smoked meat another success, even with the leaking sous vide bag. It stiffened up and sliced relatively easy considering how temperamental Dexter can be.You worked hard for that Pastrami!!! POINTS for Jake!!! ENJOY

That is a big beast. Side to side in your smoker. That probably wouldn't fit the 650 without modifying the brisket some17lb packer is in the chute, Hickory with a tube of cherry.

I could be wrong but I think the IW650 and TL850 have the same sized barrel? That is a big beast. Side to side in your smoker. That probably wouldn't fit the 650 without modifying the brisket some
It could very well be, no one around here stocks the Timberline models, so I have never seen one. Hadn't paid attention to the spec sheet on it either. I have only seem the two Ironwood sizes side by side. And the IW885 dwarfs the 650 in length by what looks like a lot of real-estateI could be wrong but I think the IW650 and TL850 have the same sized barrel?
I wonder if that was a design criteria, "minimum width must fit a brisket", "now pass me the pitcher"...
That was the main reason I went with the 1300. It looked like my bigger briskets (I've done a few a little over 18 pounds) would be getting close to the sides on the 850. Looks amazing, RemE!That is a big beast. Side to side in your smoker. That probably wouldn't fit the 650 without modifying the brisket some

I "thought" the 850 was all I'd "need". I had never seen a full packer before I purchased. It does handle an 18lb packer so I'm still happy, but that larger size is what I would go for next time around. That was the main reason I went with the 1300.
