If you like pastrami, you'll LOVE the Montreal Smoked Meat. It is a bit of work, but well worth the effort for the end result.
The leak sucks. I should have double bagged it. But figured the bag was pretty thick. Forgot the bag may be thick, but they are all hot seamed together and that is an area that can give way when heated. Ziploc won't be a bag I will be using again for any sous vide

Montreal Smoked meat another success, even with the leaking sous vide bag. It stiffened up and sliced relatively easy considering how temperamental Dexter can be.
Brine went right through perfectly and it is seasoned perfectly as well. This is as close to being in Montreal that I will get.
Tomorrow night it's Montreal Smoked Meat on rye bread for dinner in the
Sous vide.
13 lb trimmed brisket yielded 9 LBS of finished meat. All individually bagged for quick meals

That is a big beast. Side to side in your smoker. That probably wouldn't fit the 650 without modifying the brisket some
I could be wrong but I think the IW650 and TL850 have the same sized barrel?

I wonder if that was a design criteria, "minimum width must fit a brisket", "now pass me the pitcher"...

It could very well be, no one around here stocks the Timberline models, so I have never seen one. Hadn't paid attention to the spec sheet on it either. I have only seem the two Ironwood sizes side by side. And the IW885 dwarfs the 650 in length by what looks like a lot of real-estate

Timberline 850
51" Height x 46" Width x 28" Depth
Ironwood 650
47" Height x 46" Width x 27" Depth

Width is exactly the same, but you gain height and a little depth.

That was the main reason I went with the 1300. It looked like my bigger briskets (I've done a few a little over 18 pounds) would be getting close to the sides on the 850. Looks amazing, RemE!

I "thought" the 850 was all I'd "need". I had never seen a full packer before I purchased. It does handle an 18lb packer so I'm still happy, but that larger size is what I would go for next time around.

Today's brisket is taking its time! I thought 8pm last night was plenty of runway but here I am, nervously watching the Fireboard, 191F @ 3:30p
Might push dinnertime a bit...
