No smoker here and I got rid of the Weber to purchase the Flatrock. I store in the garage between uses and really did not have room for both. I've tried twice now to buy that Country Bob's on the rec from friends and Walmart is always out of it. I have only two grocery stores and neither are what I call top notch but the meat markets around here are excellent.

There is a reason that Country Bob's is hard to find. When people who h
ave used it see it, they buy it. I always keep an open bottle in the fridge and at least one in the panty. Fortunately, I have several groceries in my area that stock it. If one is out, I can find it elsewhere.

I used to live in a small town in Virginia, so I sympathize with your lack of selection in shopping venues. One good thing about small town Virginia is that you can get some fabulous pork.

You're right about the Pork. Between Crabills and others we have no shortages here for meat. That sauce seems to not even be in stock at my Walmart at all. The space for steak sauces is only large enough for the 2 big brands. I keep looking but no luck yet. Found it on Amazon for 4x's the price of Walmart. Don't need it that bad. I bought a nice Rib Eye from a local shop today and will cook it tomorrow. We'll see if I can do this right on the real first attempt.

I tell people I moved from a town of 8 thousand to a town of 8 million. Both town have their issues. Fortunately, I am 45 miles away from downtown Chicago, so I do not have to deal with some of the issues.

Care to say the area you moved from? I moved to VA from Fla with family back in 73 while in high school. They all left and I stayed. Although one came back after 30 years once she retired. She missed the mountains and change of seasons. EDIT: Just to make it griddling related. Rib Eye is seasoning in the fridge as we speak. We're in the Conicville area. Closest town is Edinburg which does not have much there.

I lived in the town of Franklin (city), VA which is 50 miles west of Norfolk and 10 miles north of the North Carolina border. We had all the basics we needed, but we had to drive an hour or more to Norfolk, Newport News, Portsmouth, Virginia Beach, Petersburg, or Richmond if we wanted to purchase anything else. That was a pain.

It looks like you are about a far from West Virginia as I was to North Carolina.

I have been in Illinois for 23 years now. Although I do not particularly like some of the aspects of living here (like high taxes), it certainly is convenient. I can find nearly anything I need within a 5 mile drive of my home.
 
Smashburger tacos……I guess that is what you call them? We had them line a traditional burger with lettuce, pickles and everyones sauce of choice

Interesting! Never seen that before. Are those flour tortillas?
 
Experimenting with shrimp tomorrow on the Flatrock. Suggestions on temps and would you use an oil, tallow or clarified butter? I have tallow that I've yet to use but I wonder about it leaving a beef taste. Clarified butter seems to be the logical one but maybe not. Throw a do and do not do if you'd like. If I ruin it it'll be only the first attempt at this.
 
I've only done it once with oil and then a pat of butter when done. Temp was around 425-450. It will take way longer to set up and clean up. They will cook very fast. Good luck!

Since butter comes from cows milk, I am not sure how much the taste will differ from beef tallow. Beef tallow will have a mild beefy taste, which you might like or not.

The problem with using butter for grilling is that the milk solids will burn at the high temperatures normally used on the griddle. There are two ways to help that. One is to start the cook with a high smoke point oil (I use peanut oil, but anything other than olive oil should work). Then as you near the end of the cook baste the shrimp in butter. If you want to use a compound butter with herbs or aromatics like garlic, you can do so. I like adding rosemary to butter when basting.

Clarified butter is simply butter from which the milk solids have been removed. Thus, it does not burn like regular butter. Personally, I like the taste of regular butter better than clarified butter, but many would disagree. Use whichever you prefer.

Thanks Ray. I've not used the tallow and very little Ghee so far so still trying to figure these out. I'll start the Shrimp on Avocado oil tomorrow.
