Probes

They are a good replacement for OEM probe.
Their products are listed in detail with compatible models, which is very convenient.
You mean that the 3rd party probe is more accurate than the original Traeger probe????

You can also get them on Amazon, so I will try one.

Yaoawe also sells an RTD Thermocouple, but I am not sure if it fits the newer controllers.

Ordered one for my Timberline. Was not on the list but I think it should work.

I use the "trust, but verify" strategy. I use the Traeger/WireFire probe to let me know I'm getting close, but then verify with the Thermoworks Thermo Pen. I also have a Thermoworks Smoke, but honestly haven't pulled it out since using the above method.

I use meater probes. They're awesome. Monitors from your phone. I never used the traeger probe that came with the unit, and I'm glad because my 575 does not display a correct pit/ambient temp. I have to set the grill 20-25 deg higher to read correctly on the meater probe.

THIS! Stick and stay probes are for ballpark measurements. Instant read, quality instant reads are for determining doneness.

The instant read probes serve two functions. You can get temperature readings at multiple places in the cook vs one position for the Traeger probes. Furthermore, you get tactile feedback when inserting and removing the probe. That tactile feedback can be just as valuable as the temperature readings.

Yep, this could be a lengthy discussion. I often wonder if there isn’t some transference of heat down the probe itself as a decent portion of the probe is exposed fully to the heat. It’s just not a reliable finishing determination tool IMO. The procedures you mentioned are ones I generally engage in as well. 👍🏻
