Help with Beef ribs please

Not sure why folks, me included love to over complicate our hobbies.

On both my Ironwood and Pro, I have found that keeping it simple is the best thing.

To make ribs I use by far the easiest method I can. They ALWAYS come out tender, juicy and with a great bark.

1. Using only the Traeger probe and built in thermometer.
2. Do NOT use the auto recipes in the app to automatically control time and temp. I found that they get confusing and do not ALL work the same.
3. Preheat grill to 165 or super smoke (if you have it and remember)
4. Set probe alarm to 160 degrees.
5. Smoke for two hours, then turn temp up to 185 degrees.
6. When probe hits 160, remove ribs, add your sauce and wrap in foil.
7. Raise grill to 225, return foil pouch to grill. Set probe to 205-210.
8. Remove and let sit for 30 minutes.

Takes about 7-8 hours, I usually start the cook around 9-10am and ribs are ready for dinner. I have the 650 and 575 so for the larger grills it might take more a bit more time.

On beef ribs, I go by feel and time. I personally don't have any luck with probes on small things like a rib and they don't really tell you where you are breaking down connective tissue.

The ambient probe is usually inaccurate as well. That’s why I recommend the Thermoworks or FireBoard which can be used for both ambient and meat at the same time. Those inexpensive probes are usually not very accurate.. At the very least, get a Thermapen MK 4 instant read, to test for doneness in several places...They are pricey, but you won’t be disappointed..
Those thermometers will definitely up your game.....
You are 100% correct James. I’ve done about 10 cooks since I received my Ironwood 885 a couple months ago and have noticed anywhere from 10-30 degree difference on ambient temp vs non Traeger probe and a difference on average of about 10 degrees on Internal Temp probe. It’s unbelievable to me for the amount these smokers cost they read so inaccurate.
 
I have to agree with James here... this forum is now contaminated with bad cooks because the Traeger "meat probe" was relied on, and even the Traeger main ambient probe only was relied on....
The meat probe that came with your 575 (mine was never even taken out of the bag) is :poop:
and your pit temp should be monitored with a second reliable probe you can compare to...
YES, you can cook at any pit temp you want till the meat reaches it's goal IT, but if you are using Celsius (which is plus and minus 4° F) and a Traeger Meat Probe (which can be off by + or- 'ruined meat') Then you'll be cooking beef ribs till the cows come home!!!!

Did you spend a lot of $$$ on your grill??? YES, we all did. Should you have a reliable meat probe??? yeah sure.... but you DON'T.
Traeger is a GRILL, not a computer machined oven, you are still the cook and the grill still needs to be OPERATED correctly or you have BAD MEAT. Unfortunately this means you need good TOOLS to help you master the Traeger grill...
Wow, I take your response as sort of, well, an insult. If I had to guess, I'd say more Traeger customers than not have problems with the Traeger grill. Sounds like you get perks for supportive Traeger comments, really. Now don't take this personal, but when you say "contaminated with bad cooks", that's pushing the negative a little too far. For the $$$ Traeger charges for their grills, in my opinion they should also give us top-notch accessories with it. smokingpapa is learning to use the grill like the rest of us, maybe we "bad cooks" aren't so bad. Lighten up please.

No it sounds like you took it personal... 'bad cooks' didn't mean PEOPLE it meant bad cooking experiences... as in "my rib cook turned out bad" ... so

I agree, but the sad fact of the matter is that they don’t. The meat probe in particular is worthless...
Use it if you want, but I can almost guarantee that you will waste more in expensive meat, than the price of a good probe...
Maybe they will see some of these posts and change suppliers...

I know who the supplier is (or at least was). I cash their check every two weeks. :)

Using the stock probe might work for some but not me. I did chicken drumsticks July 4 2020 with the stock setup. They should have taken 1 hr 15 mins., they didn't. The grill was so screwed up it took almost 4 hours to cook them. I got a Fireboard found grill was running up to 50f degrees cool. And meat probe wasn't even close. So I purchased an Mk4. Now I know what my grill does and am not afraid to cook anything.

BUT TIMMY, you paid so much money for your Traeger don't you feel like you got ripped off?? Or worse yet maybe Traeger owes you the money you spent on these accessories!!!! I mean it came with a computer, how come it don't just cook for you!!?????

Ya I got ripped off! The only thing Traeger owes my is a GD grill that does what they say its supposed to do. As far as the computer, they should have had way more R&D before releasing them. They could have saved a ton of $ by keeping them made in the U.S., right now if there's an issue they throw a new controller at it. If I could do it over, I'd have spent $900+ on a real nice stick burner.
