Not sure why folks, me included love to over complicate our hobbies.
On both my Ironwood and Pro, I have found that keeping it simple is the best thing.
To make ribs I use by far the easiest method I can. They ALWAYS come out tender, juicy and with a great bark.
1. Using only the Traeger probe and built in thermometer.
2. Do NOT use the auto recipes in the app to automatically control time and temp. I found that they get confusing and do not ALL work the same.
3. Preheat grill to 165 or super smoke (if you have it and remember)
4. Set probe alarm to 160 degrees.
5. Smoke for two hours, then turn temp up to 185 degrees.
6. When probe hits 160, remove ribs, add your sauce and wrap in foil.
7. Raise grill to 225, return foil pouch to grill. Set probe to 205-210.
8. Remove and let sit for 30 minutes.
Takes about 7-8 hours, I usually start the cook around 9-10am and ribs are ready for dinner. I have the 650 and 575 so for the larger grills it might take more a bit more time.
