Hello from Arkansas - Brand new Ironwood 885!

After 15 years using a Weber Genesis, I finally pulled the trigger on a Traeger. The Weber still works fine - I just wanted a Traeger!

I made a spatchcock chicken according to the Traeger recipe, see pic below. I couldn't get the skin to crisp up and the smoke flavor was very faint (Cherry). The chicken was sitting in a lot of juices on the baking sheet so I suspect that's the reason for the lack of crispiness. If the chicken was placed directly on the grate I feel the chicken would've been tastier.

Anyway, happy to have this grill after a week of research!

Well, trying the 321 Baby Back Rib recipe today, see below....I'll know in about 2 hours if it's successful. I'll try to take some food pics.

For crispier skin, try placing the chicken directly on the grate and patting it dry before cooking. To boost smoke flavor, use the Super Smoke setting or stronger pellets like hickory. Enjoy your new Ironwood 885!
