I can't find Chuck roasts or steaks in my area. Probably have to special order it from a butcher. Guessing it is all used for ground beef here

I'm lucky then cuz my Aldi's (owned by Trader Joes) has them all the time, they also have the BEST Rib Eye's, I have never cooked a bad one yet!!! They are incredible and only $10-$11

I wrapped, some of it was already at 199... the probe is stuck were it was in the 180s now, so I'll take this wrapped up to about 195 and call it... if it has a "burnt end" then that's cool!!!! We will cut from the center and eat good.

Envious of the varieties that are accessible in other places. We don't ever see some of these cuts.
That's just plain SAD right there... and I don't even live in COW country!!

Maybe the Albertan people are more fortunate as they are in our cow country
and they HOG it for themselves, just like in Amarillo TX

This Chuckie tasted so damn good I know it was a sin, the wife went bonkers over it.
I can't imagine what this will be when I cook it perfect, cuz this was unreal.

Keto Wings tonight. Mixed 3 parts Bad Byron's Butt Rub with 1 part Golden Monk Fruit and it makes an awesome wing rub. I've done the before with Turbinado sugar, but using the golden monk fruit made a great sugar free rub for wings.

I lay the wings out, then spritz with peanut oil before dusting with my custom rub. Wait ten minutes, flip and repeat. Smoke for an hour at 180, then bump to 375 till the skin browns and gets crispy.

You are definitely the wing king around here!! I'm going to try some later this week with your method. I think I'm going to pick up some holy voodoo to try on them... I may also soak them in hot sauce over night, thoughts on doing that?
