Each chuck steaks had a mind of its own for how long it wanted to be cooked. One is still on now
I will do this again for sure. Nice change from pulled pork tacos. Looking forward to sous vide leftovers

Today Thursday 8-5-21

The wine was from a vineyard I am not familiar with & could be a cheap wine.
Plus it was old & thought it might be going flat.

So, I used it to fill the tube in the chicken's as^.

Then, I thought I should taste it just in case it was bad before I put the chicken on the grill.
Was not only not bad, it was pretty decent - so I had to have a couple glasses more.

Trying top round as carna assada, split it in half and marinaded for 3 days, then dried with a paper towel and used Traeger prime rib rub 20-30 min.
cranked up the Traeger and got the initial 55 degree right to left gradient ( see below)

Note this is at 3 min ….in 20 min the gradient should shrink….
steaks with FB probes ready to go…
grill set to 225 with SS.

HEB prepped Coconut Shrimp & Artisan Pizza for appetizers tonight.

Followed by HEB 1/2 lb. Prime Brisket burgers, seasoned with Eden Tamari and McCormick Montreal seasoning.

Served up on a Martin's Potatoe bun with lettuce and a big slice of red onion. No other condiments needed as that beef brisket flavor comes though. OMG.

10 lb packer brisket goin overnight, fat side up. Of course HEB brisket rub. Bear mountain bold in the hopper and in the tube.

I just ordered a bag! I never would have thought about buying any other brand until, I saw the “pellet dust test” from Slimpicker.

Did you use pork tenderloins for the back bacon? This will be some tender cuts of bacon.

I just ordered a bag! I never would have thought about buying any other brand until, I saw the “pellet dust test” from Slimpicker.
I have been happy with the bags of Furtado Farms Pellets I have gotten.
There are some stores carrying them in Alberta and in BC. Wickertree is one of the stores. I have ordered through Dickson BBQ in Ontario. They have a flat rate foe shipping Pellets @$8.00. Regardless of the quantity of bags. My last order was 210 LBS, figured I should try all the woods this summer. And seeing I can grill into the winter, I should be set for Pellets.
