I mixed up and cased some sausage for smoking
Salami in the chubs, pepperoni sticks, and frankfurter (trying to get a European style smoked dog, all pork)

On the smoker this morning. Top shelf is running about 20° warmer than the bottom where the grill probe is.

Wife wanted leg of lamb yesterday but was to busy so smoked it today. Garlic, salt, pepper, thyme & rosemary. 275 for 3 hrs and pulled it @ 145 degrees

I did a spatchcock chicken this afternoon on my 780 and two ribeyes in my Sous Vide then seared in a cast iron pan. I slowed the Traeger down to 200 and used my smoke tube and smoke box. One of the best smoke flavors I’ve gotten from my Traeger yet.

Easter leg of lamb…lemon, mustard, garlic and rosemary marinade, about 4 hours at 130c until internal temp hit 66c. Perfect!

Inside, but Nutella stuffed French toast for breakfast and filets on the weber gasser for dinner. Also grilled corn for elote. Wanted something else for color but teenager wanted mashed potatoes so went with that. Happy Easter to you all.
