That looks really good. Summer sausage is another one I want to make.
Here's a good website for information on making sausage and other meats. Marianski brothers have authored a few books on smoking and sausage making. Their website also has some information on smoking meats
The website also has a recipe section, which includes a sausage section
The website is a great reference for all types of food preparation
 
When you see the "use or freeze by" date is today, make meatloaf, 2lb, onions, peppers, kinders rub, done to perfection.

Vertical chicken roast. Rubbed with butter, salt, pepper and sage, 225 to 160 IT. Super smoke plus a 50/50 pellet/chip mix in the tube. Good smoke, crispy skin, could benefit from maybe another 5 degrees, but I’m not complaining. Need to do chicken salad canapés for 30 so I figured I’d break out Betty to do the job.

I'm doing bacon wrapped shrimp with Monterey jack and jalapeno on the old Century 22. SWMBO caught the sun shining through the startup of the Century 22.

My sister is getting married tomorrow and wife asked if I wanted to smoke something for Sunday lunch. Stupid question l! 18 hrs on Traeger @ 210
Couple months ago ThermoWorks had open box sale on the Smoke™ Remote BBQ Alarm Thermometer so I bought one..used traeger thermometer in one butt and smoke thermometer in the other one.

Did you wrap any of them? You find the smoke tube works better at the front like in the picture?
smoke tube works best if place opposite the exhaust, even tho the fan blows it around anyway. I'ts not rocket science tho.

I put each in a foil pan then covered tightly with foil after they hit 170, cooked to 205 internal. They were a hit at my local Oktoberfest.
