Two failed Briskets

Which can be off as much as it takes to ruin your meat or even allow you to eat undercooked.
Highly and extremely advise using a good 3rd party probe system for your meat and pit temp.
I guarantee you were not reading actual temps if you used the Traeger meat probe and RTD probes
 
i didn't wrap because i use to cook on weber smokey mountain all the time without wrapping. maybe i should reconsider wrapping this piece
You'll have to adjust your cooking protocals coming from a Smokey Mountain bullet to a Trager. I too came from a Weber Smokey Mountain smoker (actually miss it) and realized this after several cooks on the Trager. BTW, I always wrapped in pink butcher paper. Follow the guidelines posted on this forum for future cooks. You won't get the smoke flavor you had on the Smokey Mountain, that was very disappointing for me. Good luck!
