I can't seem to figure out why my Timberline 1300 keeps leaving a lot of grey/black soot on anything I cook. It's most apparent on chicken/turkey with a light colored surface (hardly could tell on ribs). I got the smoker used, and have since tried really hard to get it very clean inside. Vacuuming, wiping down the grates and interior. I don't see much dust in the hopper. I've tried multiple brands of pellets. The turkey in the picture used apple pellets, 225/supersmoke until the turkey was 110F. Then turned grill up to 350 until the bird hit 165F. Once I removed the skin, the meat tasted great, but it looks even worse than the photo shows (fingers turned black just touching the surface of the bird). It's my first smoker so I'm not sure what to test/replace. I can hear the fan working (it breaths like a dragon while on super smoke mode). But could it need to be replaced? Or the controller? Any further tests I should try? Would video showing the pellets burning in the fire box be helpful? Thanks for the help, I'm about ready to put this back on craigslist.
