Traeger Pro 780 + Smoke Daddy Magnum PIG cold smoke generator = HEAVEN

UPDATE: I’m never going back. I guess the saying might be, once you go Smoke Daddy you never go back! Today I smoked a rack of ribs and a whole beer-can chicken and the smoke flavor I got from these two cooks is on the level of what I expect from a stick grill.

As mentioned before, I used multiple simultaneous smoke tubes with wood chips in past cooks and not even close compared to the SD.

I’ll never go back. I highly recommend adding a SD to a pellet grill. The flavor is extremely close to par with a stick grill. Hope that helps.

I think it’s going to come down to what your burning... Saw Dust= Pellets Vs Wood=Chips, Chunks, Splits...

Smoke tubes work.... especially when you burning wood chips in them. Or at least a mix. Smoke tubes can get messy, spreading ash on your food (fan/convection from grill) and have a tendency to go out.. at the end of the day pellet grills burn to efficiently and don’t hold what pellet smoke that is produced in the food chamber long enough... these cold smoke generators burning straight wood (eliminating the pellets) or the Smoke Daddy Big D... Diffuser.. (also burning wood chunks or splits) gets you about as close as your going to get to true smoke flavors via a pellet grill... IMO

I can’t relate to the Smoke Daddy or other smoke generators but they burn the exact same fuel (pellets, chips and chunks) as a smoke tube or box. Then take into account they both burn a small amount that is added into a pellet grill which is burning a larger amount of pellets along with a fan that’s pushing/rushing the smoke out of the grilling chamber. A stick burner burns only wood at a slow flow rate (low and slow) allowing the smoke to penetrate the meats without being forced out of the smoker’s chamber. This gives the meat its “wood smoke flavors” that a pellet grill cannot come close to. However although I’ve grown up with the stick burner (original BBQ pits and offset smokers) then switched to a big green egg that burns lump charcoal (not to be confused with briquettes) that is very similar in taste but less work. My opinion is nothing you can add or do to a pellet grill will compare but I’ve been experimenting a lot with my 780 and I’m finding some meats (ribs, tenderloins, bone in chicken) that I’m actually liking the lower/different smoke flavors. I don’t like pork butts on it and will continue using my egg but I do like the simplicity of the Traeger. If you haven’t experienced the smoke flavors from wood burners then you will be fine with the Traeger with or without the smoke generator devices.
 
They do sell them. How well do they work? After taxes, S&H it costs about $100.
I haven't tried one. The youtube reviews seem positive on them.
It does give the smoke a little more time in the chamber, which may help a bit. It is still pellet smoke though, and the moisture content and nature of the pellets can only produce so much. If it was used with a smoke tube or something similar using wood chunks or chips you might notice more smoke flavor to the foods then.

You and I have a 575, I tried a MOD that almost did the same thing, designed to leave more smoke before exiting the pipe.
I had BAD temp fluxes and Traeger wasn't working as designed.
For me, I wouldn't get one, if you want more smoke smoke tubes are $20 and mine work superior to other methods IMO.

I have the maze. It works well but is a serious pain to light and takes up a lot of real estate. Thought about the 12” tube

I’ve seen some You-Tube vids where there was a noticeable amount of creosote build up in the chamber and smoke stack of the smoker when using the mod.
 
I had mainly chunks and few chips then very very few pellets (one handful for both tube and box) just to help get the wood burning. So nothing really different that your Smoke Daddy is burning. I might have to refill during a long cook. However I’m not new to smoking, I’m 61 and have participated my entire life. The chips and chunks are definitely not the same but better than pellets. No where close to an offset or the “bbq”pits that I grew up with but much better than pellets/compressed sawdust.

Well, that's certainly an opinion, but since you haven't used a Smoke Daddy Magnum I'd wager that it's not a very accurate assessment of the reality. The fact is, adding a Smoke Daddy gets you far closer to that stick burner taste than you think. If you used one, you'd know this. Throwing chunks/chips in a tube or tray in your pellet barrel isn't the same thing, because you are lacking a fundamental property: the Venturi effect from a positive pressure air pump constantly pushing smoke through your cook chamber. I've used stick burners as well, and yes - this is very close to the same smoke profile. But that's fine - you do you. If what you are doing gets you the cook you enjoy, then that's all that matters.

I wasn’t down talking you but just pointing out how I’m getting the same thing without spending the extra money or modifying my grill. But yes it works for me “on certain meats” and isn’t the same as my egg or an offset so I will continue using my egg for some cooks. I do agree, I’m happy with the direction I’m heading. I honestly do appreciate any feedback and advice you or anyone else contributes, thanks.

I also would have to disagree, based solely from my own experience in using three smoke tubes vs one SmokeDaddy. There is a difference in flavor, a significant one. I believe the reason for the difference may lie in dirty white smoke vs clean blue, and the SD can get you the blue smoke.
 
My "Smokin-it Bella" puts out a different and dirtier smoke than the tubes do.
Creosote also builds up and causes a diff flavor and leaves behind some nasty stuff.
The reason (I believe) is the enclosed burning instead of open burning in a tube.
Enclosed burning turns everything into a wood stove affect, and the burn is in the same place at all times. At the bottom, where I think it condenses much of it's creosote, and become a completely different smoke than MY tubes, which burn clean and only drop a little ash.

I need to use my Bella more often but probably only for cold smokes. My "tube" system is unbeatable for getting me awesome smoke flavor and I've been a stick/coal smoker for decades. For me it's my custom mix of pellets and 2 diff chips. THE END
