I like your photos (nice Job), I am concerned that you may be inhibiting the air flow out the exhaust ports with your steel fittings, I made that mistake and had to change it out.
When you heat it up for the first time do it slow with a fire board probe close to the exhaust port if it gets to hot, to quickly shut down and re evaluate, remember that now that you have insulated it will take longer to cool down.
I threaded a left and Right Fireboard Ambient Probe behind the ceramic wool while I had it all open the Wool will protect the probe wire. this also give you the Temp gradient in the Grill (each grill is different), it will help on your cooks....
