Smoking multiple briskets

My first briskets x2 finished nicely early last night. I bumped up the grill temp to speed up the time. Probably a rookie mistake #13. I had hit close to 165 on of the briskets 19 hours. The other was still at 154. So I moved the briskets closer to the left side as possible for the higher heat effect. At the rate I would of pass the 24hr mark. Overall, the bark was dark but not crunchy except for some spots. I was going to cut and do brisket burnt endz but the point was almost falling off-pulled brisket. What was the cause of this? Finishing off too fast? Higher temp change during the wrap? Taste was spot on great. Juicy. Overall? For my first brisket I don’t think I’ll be doing 2+ briskets, unless there both less than 12lbs each. A lot of work in prep. Regardless of set and walk away, it was a very long day. Add hoppy IPA’s in the afternoon while waiting in anticipation. Now I’ve got to vacuum seal some of this for leftovers. Damn.

I've never tried a brisket...not after even 20 years of smoking. but I know how you feel when it comes to the end of a cook...damn, who's gonna clean all this mess up and vacuum seal the meat?! you are :) happens after every pork butt I do. I've gotten better at timing it though so at least it's not the last task I have to do before going to bed.

now that I have a Traeger and all the gadgets and apps for monitoring, I'm sure one day I'll have an extra 100+ bucks in my pocket to do a prime brisket cook.

The cost wasn’t so bad. Bought 2 14+ lbs primes so it was over a hundred. I’d buy smaller briskets next time. Of 1 15lb. I know it’s a learning experience. So every brisket, pork shoulder or ribs will be different. I did take notes on my phone but somehow it disappeared. I need to take better notes and keep them from disappearing.
