The cost wasn’t so bad. Bought 2 14+ lbs primes so it was over a hundred. I’d buy smaller briskets next time. Of 1 15lb. I know it’s a learning experience. So every brisket, pork shoulder or ribs will be different. I did take notes on my phone but somehow it disappeared. I need to take better notes and keep them from disappearing.nice job. I've never tried a brisket...not after even 20 years of smoking. but I know how you feel when it comes to the end of a cook...damn, who's gonna clean all this mess up and vacuum seal the meat?! you are happens after every pork butt I do. I've gotten better at timing it though so at least it's not the last task I have to do before going to bed.
now that I have a Traeger and all the gadgets and apps for monitoring, I'm sure one day I'll have an extra 100+ bucks in my pocket to do a prime brisket cook.
