I’ll be grilling/smoking salmon steaks today. I’ve done fillets on the T grill before.
im thinking about searing the steaks on the Weber first and then throwing them on the T grill to smoke the rest of the way. About how long should I leave them on the Weber for searing? 1-2 minutes per side? I know it doesn’t take long time-wise when I grilled salmons on my Weber. Also approximately how long on the T grill to reach internal temperature with inside grill temp set at 225? I’ve read the internal temperature should be 120-125deg. And others say 140deg. Which is it?
 
I always take my salmon to 140-145 and don’t find it too dry at all. In fact, I had some last night and it was perfect (for me and my wife).

I started at 225 and bumped to 350 at around the 30 min mark. I want to say it took about 60 mins to reach 140.
 
The finish temp depends on what kind of salmon you are cooking (as well as personal preference). As a general rule of thumb, the farm raised Atlantic salmon is typically cooked to a higher internal temp than the wild caught Pacific salmon. So, the farm raised can go up to 135F-140F, while the wild caught would tend to be better down in the 120F-125F range.
 
I would recommend cooking it in reverse: on the Traeger first @ about 180-200F until the salmon reaches 110 or so. Then onto a hot cooking surface like a gas grill or cast iron pan on a stove until 140F. Did it this way a out a week ago and came out great. I didn't want to risk the salmon sticking to the hot grill so I threw some butter and olive oil in a cast iron skillet on the grill.
