Pro 780 No smoke

You bought what you bought. It's a very flexible tool for outdoor cooking. You can cook a variety of different things on it. You can truly set it and forget it. You can control it form anywhere in the world. What you didn't buy is a stick burner so you aren't going to get a stick burner taste/result.
It's as simple as that. Hate you aren't enjoying it. What do you want to sale it for?

You kind of nail my issue on the head. This whole Traeger ordeal has but nothing but a hyped-up money spending fiasco. I am already in this for way more than the 1k. I've bought the shelf, grill tools, liners, probes ect. I am well 1500 into this. I could have bought 2 nice webers by now, knowing I didn't not indeed buy a smoker, which apparently I didn't buy according to all you. You all should also keep in mind, the material a Traeger is made of is like "tin" compared to the composition of a weber. So did I buy a smoker or not? Again, apparently not. The smoker feature is on Amazon for 12 bucks.

Like I said, it doesn't matter how much you spent or who you spent it on, you're not going to get "smoker" results out of a pellet grill. You'll get pellet convivence from a pellet grill and smoker results from a smoker (i.e. off set).

Different tools for different jobs. Sounds to me like you bought the wrong tool, Harelydude. ;)

Welcome to the forums. We are not Traeger support plus we have plenty of criticism. Some of us just enjoy cooking / grilling / bbq / smoking on our traegers. I know I do. Just finish turkey and chicken breast for dinner today. Family loves them. Enjoy and hopefully you are able to find the grill that best works for your needs.

I don’t care how much you spent or what you want, a pellet grill will never give you the results you want if your expectations are to have the same results you get from an off set.

You get a smoke from a pellet grill, at least I do, but it’s not an offset flavor. My son-in-law has an offset and it’s not even close. And I’m not mad about it.

Any amount of research would have told you this. If you didn’t research before dropping a grand and your expectations are “off set” then yes, you bought the wrong tool.

I understand your concept. Until I started wanting a smoker I had never even heard of an “offset” nor have I ever tasted any meat from one. But I had tasted a smoked Turkey on a Traeger before and did taste smoke. Mine….nothing

Do you not get any smoke profile? Even when cooking at lower temps (i.e. <225)? I wonder what the variables are from the one you tasted vs. what is coming off your grill. Different grill, pellets, set-up? Did they use a smoke tube or another "crutch" perhaps??

FWIW, when I got my grill, I really didn't know the difference either. I had this generic concept of what a "smoker" does but that was about it.

I did every step they did followed recipe exactly. Same pellets, same temps etc. No they did not use a smoke tube. I would think the smoke tubes would maybe make it taste a little harsh and be almost to much smoke. I dunno. Never tried one.

Thats strange. Wonder if it would be the meat itself (sounds strange but can make a difference) or the rub, somehow

I have a tube but really don’t use it so I can’t vouch for how good or bad they work. I know people love them.

Well....then he doesn't have "super smoke" either. So it doesn't appear the problem is with Traeger or the line of Traeger you've got, but yours specifically. I'd still get a smoke tube. From everything I've read burning pellets in there will give you more of a smoke flavor, but nothing as profound as an offset.
 
Called Traeger and they said the Pro 780 doesn’t produce visible smoke. They said take it back to ACE Hardware and get the Ironwood 885 or the Timberline 1300 with the super smoke feature if I wanted a heavier smoke.
I went back to ACE today and they said to bring the grill back and get the Ironwood 885. Thank you Traeger and ACE for the excellent customer service.
P.S. Traeger said if anyone is using a pan with charcoal and wood chips or a Pellet tube in their Traeger grills to produce more smoke it will void the warranty.

Interesting! So take it back and spend MORE money for an upgrade. My local Ace store told me the “super smoke” option doesn’t really work. SMH
 
I was watching YouTube videos today where they were complaining that Traeger’s won’t sear a steak either. I haven’t done steaks yet so I don’t know if this is true.
