NYC Weather - 3 Below Zero. Is It Even Possible to Cook on My Traeger?

I just cooked ribs using 3:2:1 method here in Colorado, the Traeger was registering -8 F when I started it. It did fine.

Since smoking is about the meat temperature to determine your "turns" you can just monitor your meat temp and take longer between steps or you can adjust grill temp higher to compensate if the cold weather is reducing the interior grill temp. It's all about having reliable ways to monitor temperature.

Our family enjoyed the smoked bacon that I made last Christmas morning, but this year I thought it would be
more challenging with the cold temps and WC in SE WI. I decided to move the grill in the garage and open up the
garage door during the cook. My only issue was my app wasn't recording the proper temps or time, but the Traeger itself
was keeping up with temps and times.

The bacon came out really good again.
