New to pellet grills

I am coming over from using a Kamado Joe for the past 10 years. Health reasons required me to use something a little easier so I bought an Ironwood 650. First pellet ever so hopefully I made a good choice. I hope I can hit the 500 degree advertised temp to get some sear marks with the Grill Grates I have leftover from my Joe. Anyway my new 650 will be delivered on Aug 28…. Just in time for college football.

I had (still have) a clue green egg for about 30 years,
The pellet grills don’t put out near the smoke flavor you’re probably used too and I don’t know anything about the Ironwood I have a 780 Pro but I can’t sear with it. I have a Webber gas grill along with a Blackstone griddle so I use those for grilling and my 780 for smoking. As for getting some decent smoke flavor do a little reading on here about smoke tubes. I use three and even though it’s not as rich smoke it’s decent enough for me. I really like the easy of use too. Set and forget. Once you get going post up some pictures of your cooks, we’re a picture hungry bunch here!
 
Welcome to the forum @Smokin In Bama - The Ironwood 650 is a great smoker and you'll have no problem getting those sear marks with the addition of grill grates! Let us know how your first cook/smoke goes!

The Ironwood does not get quite hot enough without GrillGrates to get a great sear, but you should be able to do a good job with the GrillGrates.

What you need to figure out is whether you are going to do a normal sear or a reverse sear. I like doing reverse sear, but find when using GrillGrates grates on the Ironwood, it is easy to over cook the steak. Thus, I now cook the steak low and slow on the Traeger until I reach an internal temp of 125F and the move it over to a hot griddle to sear the meat and achieve final temperature, which for me is 140F. This year I purchased a CharGriller Flat Iron gas griddle, but I have also done them in a carbon steel skillet on a gas stove. I like basting my steaks in butter seasoned with garlic and rosemary. That is more difficult to accomplish on the GrillGrates.
