I underestimated my timing on a 8lb pork butt. Been on for 6 hours. Only at 160 degrees. Need to leave house in 3 hours with it. Do I wrap and crank temp to 350?

If you cook it at 350, it’s gonna be pork jerky. If you were going to cook it at 160 for a few hours, you should have started last night. Internal temp of a done butt should be around 200, so ain’t never gonna get ther at 160. After it’s done, it needs to rest for at least 2 hours.
What is the internal temp right now?
Bump the temp to 275…

I was cooking at 225. I’m at 170 now. Bumped up to 300 and saying prayers

Don't wrap till it's done cooking, then wrap in foil and a towel and in a cooler it goes... THEN YOU LEAVE.

NEXT TIME YOUR COOKING WINDOW SHOULD BE 10 HOURS AT LEAST or don't cook it till you can.

Truth: you could have started it 10 hours ago, a pork butt can sit resting in a cooler for up to 4 hours and still be hot and pull great...

I think you should have started it 10 hrs before you did. 16hrs for the cook is about right. It would have taken less time if you cut it in half, but still at least 10+ hrs.
