Poultry Left over pulled chicken recipe

I’ve got most of a rotisserie chicken in the fridge. What’s the best way to reheat it into pulled bbq chx sandwiches? Pull it, then just warm it up on the stove top with some bbq sauce cut with chicken stock?

That should work just fine. You can also do a crock pot if you want it to marinate for longer while it warms up.
 
It might be difficult pulling the chicken directly from the refrigerator. Heat it up first to soften the meat. Then use nitrile BBQ gloves to protect your hands. An alternative method would be to use a boning knife to remove the meat from the bones and then chop it up with a cleaver or other large knife.
 
I’ve bought rotisserie chickens from Sam’s Club close to closing time for cheap. I pulled the meat loose and put it in the crockpot along with some chicken broth and cooked on low for a few hours until the chicken soften up and pulled apart easily. Then added some bbq sauce. What wasn’t eaten I put in food saver bags and froze for another day.
 
Thanks guys - I sautéed some onions, peppers and garlic then added the pulled chicken along with about a cup of chicken broth. A few dustings of Traeger Chicken rub and brought it to the table. Then everyone could add what ever sauce they wanted. Yes, I have several in the fridge: Killer Hog (BBQ sauce AND the vinegar), Womp Sauce (Comp and Naked) to name just a few. I actually wished I had some of the Alabama White made, but maybe next time.

Plenty of left overs for lunch today or freezing.

It is quite easy to whip up your own Alabama white BBQ sauce. It is basically mayonnaise mixed with apple cider vinegar diluted with a little water and then seasoned with Worchester sauce, salt, pepper, onion powder, garlic powder and hot sauce to taste. There are a number of good recipes online that you can tailor to your own preferences. You can make a batch in less than 10 minutes.
