It's home! The new Traeger Ironwood L

I smoked a turkey breast last night, and it turned out fantastic! It may very well be my best one yet, although my kids and wife often remind me that I say that a lot 😂

I set the smoker to 275 degrees, and it held steady within plus or minus 10 degrees throughout the entire cook. After 2 hours, I wrapped the breast in foil with some butter and let it cook for another 30 minutes. The result was perfect - the color, juiciness, and tenderness were all spot on.

Now it's time to see how this new rig handles a brisket!
 
I feel like the smoke output has been much improve. I think they’ve moved away from trying to regulate temps too tightly and allowed more fluctuating temperatures into their algorithms. Some people find this troubling but really what matters is the average temperature (within reason) and the fluctuation allows an inefficient burn and better smoke.
 
Have you tested the probes to see how close they are? If I wanted a 275 cook I’d have to set the Pro 780 to 315 or so. Is that still the case or have you seen an improvement?

Just remind your family that every cook is supposed to be better than the last. You are gaining experience with each cook. ;)

I agree, It also appears there is quite a bit more smoke coming out of the back of the smoker compared to the old one.

I haven't compared the stock probes to anything else, but based on how the turkey turned out, I'd say they're pretty accurate.
 
I figured I'd put my Ace Hardware points to work and added two new accessories to my Ironwood today. The roll rack and storage bin. The build quality on these add-ons are top notch.
