Inserting probe through foil when cooking

Hi, I'm new to smoking and I noticed that many recipes call for wrapping/sealing food in foil, and then a subsequent step says to insert the probe into the food.
Questions...
1)Doesn't inserting probe through foil defeat the purpose of sealing the food and release heat?
2)Will the foil cause a false temperature reading since it's touching aluminum?

While you will have to poke a hole into the foil, it will be pretty small and most of it filled with the thermometer. You should be good without changing the way the cook turns out.
 
1} The small hole in the foil will not release enough steam or heat to change the effect of sealing. I have seen the wire from the probe exiting the edge of the drip pan and the foil wrapped around the insulated wire.
2} The probe only transmits from the pointed end and will not be effected by touching the foil up on the shaft.
