Actually 1x Ambient Probe and 2x Food Probes.. You will need to order the Competition Pack From FB the default probes are the Fat ones...
 
I'd recommend to anyone that buying the comp. probes are the way to go. And get some short ones, as well. they are great in steaks, pork belly, checking ribs, etc. I probably use the short ones more than the long ones, and I never use the "standard" probes at all.

I agree! I bet I use the shorties 2 to 1 over the longer ones. I have even used them on a packer brisket ( just about the perfect length for the center of the flat).
The standard probes that came with my FB, are still in the packaging.

I also suggest a second ambient probe. Two ambient probes are very good for determining the heat gradient inside the smoker, and a spare is great to have ( I somehow managed to ruin an ambient probe yesterday 😭).

I was curious so I ran two ambient probes yesterday - one next to the Traeger pit probe and the other center-back grate next to the ribs.

It was a pretty steady 30 or so degree difference. One thing I noticed is when I opened the lid the temp dropped more on the grate probe than so on the pit probe. It did come up quickly when the lid was closed.

I used to place an ambient probe next to the protein, but finally realized that isn’t a very good place for an ambient probe.
I noticed that the ambient temp next to the protein was much cooler than the probe next to the Traeger probe, even though it was on the left side or center-back, which I know for sure is a hotter part of the grill.

I realized that the protein was actually cooling the probe and I wasn’t getting an accurate reading, even though the probe was a good 3 or 4 inches away.

I had the opposite. My grate probe was 30 degrees higher than the pit probe.
